This healthy fish kofta recipe is perfect for anyone following a balanced diet and looking for a quick and easy seafood meal rich in protein and healthy fats.

Ingredients
2 salmon fillets (about 200g)
½ bunch fresh parsley
½ bunch fresh dill
2–3 green onions
1 garlic clove
1 egg
1 slice whole wheat bread
2 tablespoons olive oil
Salt and black pepper to taste
Sunflower oil for frying
Method
Finely chop the green onions, dill, and parsley
Remove any bones from the salmon fillets.
Place the salmon in a food processor and blend well.
Add the bread, egg, olive oil, salt, and pepper to the salmon and mix until well combined.
Add the fresh herbs to the mixture and blend again. Chill in the fridge for 15–30 minutes.
Shape the mixture into small patties and fry in sunflower oil until golden brown.
Serve with a fresh green salad and your favorite healthy sauce.
