Ingredients
4 slices of whole wheat toast
2 tbsp natural tomato sauce
50g low-fat mozzarella cheese
Sliced bell peppers (various colors)
Cherry tomato slices
Mushroom
A pinch of dried oregano
Method
Preheat the oven to 180°C (350°F).
Place the toast slices on a baking tray and spread tomato sauce on each slice.
Top each slice with cheese, then add vegetables and seasonings.
Bake in the oven for 8–10 minutes until the cheese melts and the toast is crispy.
Serve hot with a drizzle of olive oil if desired.
